This was my first attempt at a partial grain brew. I used a pair of MrBeer Sticky Wicket kits for the Liquid Malt and yeast. I added .30 lb Kamut Organic grain, .25 lb Chocolate malt, .25 lb Black Patent malt(debittered), .25 lb Cara-Malt 45, .50 lb Rolled Oats and 2lbs Dark DME. Boil size of 6.25 gallons including 2.5 gallon sparge. The Kamut was steeped 1 hr at 120 degrees in 1.5 gallon water. Then added and cooked the remainder of grains with rests at 140 & 158, with an additional gallon of preheated water. Sparge at 170 degrees. All grains were given a medium grind. Water added to make 6.25 gallon boil with the added 4 cans of liquid malt and DME. .5 oz Cascade Hops for full 60 min boil. .25 oz Willamette added at 45 minute mark. Brew added to fermenter at 80 degrees. Pitched yeast slurry made from yeast starter mix, 1 Lt water and yeast provided with kit. (yeast starter begun night before) 36 hours plus very active fermentation. est OG 1.055, actual Start OG 1.071.
The Kamut grain should either get a finer grind or soaked overnight prior to cooking. I will experiment more with this later!

Kegging Day!! FG 1.022! Taste of the flat beer? Nice full body, nice balance, very slight hops finish, nice dry tongue, lingering body. Chocolate aroma. I'll be extremely happy if after carbonation the taste does not change a lot! My original plan was to run it through a secondary fermenter, but at 1.022 it's keg time!

OK, I cheated. I took a glass early. Nice big body, chocolate aroma, nice lasting one finger head. Something tells me this won't last long!

Uncorked today! Yes, I opened up 3 kegs today. I had sampled this several times during ageing. It just keeps getting better. My neighbor had a glass, looked over at me and said "Holy SHit!". Can you make some of this for me? BIG beer, Chocolate & Coffee flavors, bold body, Dark Coffee aroma as dark head dissapates. Just enough hops so it does not finish sweet. Another Winner!!

It's really hard to decide which is best/ or I like the most. The heavy malt/ sweet stout or the dry Irish stout. Both have unique characteristics, yet both have very strong flavors. Of the 4 neighbors who had never tried Home brew, The dry Irish stout was hands down the favorite. One neighbor, a bartender by trade, preferred the sweet stout. All were much better than commercial brews.
I guess it's a matter of taste. Good thing is I now have a brewing partner/ neighbor!
