  The first thing that has really changed with homebrewing in my life is now that I am learning to taste beer, I am drinking less.  How in the heck does it make sense that now that I really enjoy a good brew, I stop drinking much sooner?  Anybody else go through this, is it just a stage?  Just curious.

That is true.  Since we have got into the hobby we've have noticed that we'll pick apart any beer or wine that we buy out.  Its like you have to compare it to what we make at home. A couple of homebrews does it for us too, it has got more to it and it seems to satisfy you more.
