  I started a Elderberry Meade Kit recently purchased from Homebrew4Less.  I followed directions completely.  Day two and we have slow but steady fermentation.  It smells heavenly!  I'll keep this post updated!

Day 3 of fermentation.  Much more activity!  Brew head is now an inch thick!

Day 6 of fermentation:  It's bubbling like fresh opened champagne!  Head is 1 inch thick and I do mean thick! Smiley  Even with a translucent container it is obviously clearing!  I'll take a very small sample to taste at 14 days, test FG and bottle.  I picked up another Meade kit to start ASAP!  This one will be the Spiced kit.

Day 11.  Still carbonating/ active!  Mead is almost completely clear!  I do not have a turkey baster to check flavor, but the smell is fruity and dry!  Bottling will go as scheduled Friday.

Bottling got waylay-ed until today.  The "Creaping Crud" came to visit, my wife's term for feeling like crap.  Sad  I added 1/3 cup corn sugar and bottled into 5 - 22 oz beer bottles.  I added the sugar for a little carbonation.  Taste is a off-sweet sherry finishing with a nice berry aftertaste.  I can taste that I used a Clover Honey!  Color is almost honey amber with a blueish hue.  By itself should be a nice dessert drink or a base for a different wine cooler!
  Materials to make this with the honey,sugar and mead kit around $11.  I will pick up a couple more of these kits!

Opened first bottle tonight!  Excellent!  Semi dry honey fruit wine.  Much better than some barley wines I've tasted.  I racked into 22 oz bottles.  Perfect amount to share!  Well worth every penny!

A couple weeks later.  A little, (read tiny bit) dryer.  Fruit flavor is getting clearer, VERY SMOOTH!  Just need to figure out how to make a 5 gallon batch!!!!  3 bottle's left, DAMN!  At least they are 22 oz bottles.  I'm going to do a fruit (apple/pear) cyser next to the Mead's.  This is SO much better than a Barley Wine.  The neighbors will be fighting over my Black Raspberry vines this year!

  Granny's Fruit Salad NEVER tasted THIS good!

  Down to the last bottle.  Bummer.  I am going to make up my own mead kit with ingredients from Blaine's shop.  If it's better, way cool!  If not I may have to buy the mead kits in bulk!  This puts most Barley Wines I've tried  to shame.  It would be interesting to make a spiced mead/ stout with champagne or high gravity yeast.

Sorry  I missed this thread.  We did a couple of those kits a raspberry and a cherry.  The first one was good, but I am still aging the second to see haow it turn out. I quess I should check on it its ben awhile.  Sounds like that is a good drink you made.
