I made a couple of the Ambrosia Farms Mead kits from HB4L.  Both turned out well.  I made the Spiced Mead and the Elderberry.  The Elderberry was a big hit, the clover honey overpowered the Spiced Mead, a Orange Blosum Honey or something along those lines would have been much better.  I saved a one of each for 8 months, both had a very strong alcohol taste.  Ambrosia Farm Kits are technically Short Meads.  I'll make a couple of the Elderberry Kits for late Summer or Fall.  A kit makes 5 x 22 oz bottles.

I made a couple of these kits too.  Cherry and blackberry.  You are right they are pretty strong and I don't like the mess either, but it is fun to watch it churn around.  I am thinking of doing a simple mead with maybe something in the secondary, but I don't know I have been pretty busy lately.
