Can you make a Orchard breezin kit into a sparkling wine like champagne?

Dave,  

  This was part of the reason for my adding champagne yeast to my Grapple Cider.  But to get carbonation I may be forced to force carbonate with CO2.  The Elderberry Mead I made I added a 1/2 teaspoon of corn sugar to each bottle.  Even though the Mead is 15% ABV or higher, there is a LOT of Carbonation.

That should change the taste and give it a different mouth feel vs. leaving it still.  I did not have to much luck with meads.

Dave,

  When I opened the first bottle of mead it had been refrigerated for a couple of days.  It did not foam up instantly, but as the bottle warmed up a few degrees, It really started to "wake up".  It tasted a lot like a barley wine, but stronger.  The Elderberry flavor was still very good.  I think the corn sugar may have helped it finish dryer.  I bottled this in 22 oz bottles.  1 bottle gave my room mate and my self a nice warm buzz!

I did the Elderberry and the Spiced.  I have not tasted the Spice yet, but the Elderberry was awesome!  I don't think it would be hard to make your own "kit".  I have several Mulberry trees in the woods beside my home, as well as Black Raspberry Vines.  I may have to give them a try!  We've made Mulberry and Black Raspberry jam several times and both were wonderfull!  We've planted Red Raspberry as well.  Could make for a good summer evening treat!
