Brewed 3/18/2011.  Yeast was good.  Blaine's inventory is up to date as expiration date was 03/2012.  I used an additional 3.3 lb dark LME at Blaine's suggestion.  Og was on target for style.  Added hops per BrewSmith Brewing Program to achieve proper IBU.  Used 1000 ml starter with nutrient starter pack in flask on stirplate.  Activity within 20 minutes!  Updates to follow.

  3rd day, still very active!  I'll rack Tuesday to secondary.  The aroma from the air lock is great!

Day 10   Beer still fermenting in Secondary, bubbling about two minutes apart.  I'll rack to keg on day 14.

  Too hoppy for my taste, but that is likely my fault.  I'll let it sit for awhile and check back on it in a few weeks.  Worst case situation I'll make an Ale with low hop and make another Black and Tan!

I don'nt like beers that are really hoppy either.  I have not ventured much in the realm of dark beers or ales yet, but I am interested.  My wife does not care for dark beers, she grew up on budwieser.  My first beer experiance was with miller light and PBR.  Homebrew beer is worlds of difference.

Dark brews do not always mean strong brew!!  Many, including Irish Dry Stouts are in line with commercial brews as far as alcohol content!  Try "New Castle Nut Brown Ale" sometime.  Very smooth, mild body and hops.  A very easy drinker!

  Uncorked for lunch.  WOW!  This is a really great Dry Irish Stout!  Creamy Dark Foam head that lasts until the beer is gone.  Ends on a very subtle hop note.  Dry, zero fruit or sweet after taste, finishes very well! A+

I have thought about that one as long as it is not to hoppy or bitter.  I like the idea of dark beer, but they have not tasted that great.
